Apple Pie Pastry Pockets are a delicious easy to make dessert that don’t require all the work of an apple pie. Small enough to pack in your lunch (or as that first day of school special treat), big enough for dessert, and a great addition to the next potluck you attend.

You will need
- 3 medium sized apples
- 2 tbl spoons of cinnamon
- 4 tbl spoons of brown sugar (I used coconut palm sugar)
- 2 tble spoons of white sugar
- puff pastry (I made 12 pockets)
- 1 egg
- 1 tsp water
- Small pot
- Baking pan
- Parchment paper
Directions
- Turn oven to 375 degrees
- Place pot on oven burner and turn on medium heat
- Peel apples and cut into small pieces – put into pot
- Add 1 tbl spoon of cinnamon & 2 tbl spoons of brown sugar to apples – stir until apples are a little soft and then remove from heat
- Mix egg & 1 tsp of water to create egg wash
- Mix remaining cinnamon and brown sugar with white sugar.
- Spoon apple mixture into puff pastry and seal. I folded over edges this time instead of using a fork to seal the edges.
- Brush with egg wash
- Sprinkle half sugar and cinnamon mixture over pastry – save the rest for when serving
- Cook in the oven for 8-10 minutes or until edges are lightly browned
- Let cool and serve with sugar and cinnamon mix sprinkled on top
Once cooled, these Apple Pie Pastry Pockets also freeze great. To eat, heat them up for 15-20 seconds in the microwave and they are ready to be served!
