One of my favourite treats at Easter are Peeps. Delicious and the right amount of sugar it’s something I look forward to every year. This past weekend we made some homemade marshmallow peeps and they were delicious. Easy to make, I can now make them for when the craving strikes.
Ingredients for Homemade Marshmallow Peeps
- 3 packets of 15mL of Gelatin
- 1 1/4 cup cold water
- 2 cups white sugar
- 1 cup light corn syrup
- pinch of salt
- 3 tsp Vanilla
- 1/4 cup powderd sugar
- Cooking spray or oil of choice
- Candy thermometer
- Pot
- Mixer of choice
- Pan or silicone moulds (I purchase mine from Dollarama)
- Cookie cutters or knife
- Food colouring
- Pastry brush
Directions
- Put 3 packets of Gelatin into mixing bowl with 3/4 cup of cold water and let it bloom.
- Grease your pan or mould (whichever you are using) with oil and sprinkle with powdered sugar
- In a pot mix 1/2 cup of cold water, 1 1/2 cup of white sugar, 1 cup of corn syrup into pot and turn on medium heat until it starts to boil. Stirring to make sure that sugar is dissolved
- Turn up to high heat and place candy thermometer into mixture and let it boil until it reaches 235ºF (if not Candy thermometer it will boil for approximately 1 minute)
- Pour mixture into Gelatin slowly while mixer is on slow. Once fully poured in start mixing together on high until the mixture is thick and white.
- Mix in vanilla and mix together for another minute.
- Pour mixture into pan or moulds and set in the fridge for 1.5 – 2 hours or sit out on the counter at room temperature for 4 hours.
- Take the remaining 1/2 cup of white sugar and divide into 4 (1/8 cup each). Mix in food colouring for desired colours for coating Peeps!
If coloured sugar doesn’t stick to the marshmallows you can dip the pastry brush into water and brush a small amount of water onto the marshmallow and then dip into sugar. If you don’t want to mix in coloured sugar you can mix in powdered sugar.
Once coated these homemade marshmallow peeps are ready to eat! Make them and give them out and the best part is they aren’t limited to just Easter! They will stay fresh for 3 days although I am sure they really won’t last that long.
