Best Ever Butter Tarts
- 20 pastry tins
- 1/3 cup butter
- 1/2 cup brown sugar
- 1/2 cup corn syrup
- 1/2 cup currants (can use raisins as substitute)
- 1/2 tsp vanilla
- 1/4 tsp salt
- 1 egg slightly beaten

Set over to 400°

Line muffin tins with pastry (or buy pre-lined)

Distribute currants into each pastry shell evenly

In small saucepan melt butter

Remove from heat and add in brown sugar, corn syrup, vanilla, salt, and egg

Mix and pour into each pastry tin, covering currants

Place in oven and bake until brown and bubbling well
